Description
A hearty and old-fashioned quick bread packed with plump raisins and a hint of warm spices. Perfect sliced thick and enjoyed with a pat of butter or a drizzle of honey.

- 2 cups raisins
- 2 cups boiling water
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 4 cups all-purpose flour
- 1 tbsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease two 9×5-inch loaf pans.
- Place raisins in a bowl and cover with boiling water. Let soak for 15 minutes, then drain and set aside.
- In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs and vanilla extract.
- In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, alternating with the soaked raisins. Fold in nuts if using.
- Divide batter evenly between prepared loaf pans and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pans for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a softer crumb, do not overmix the batter.
- Hobo bread freezes well—wrap tightly and store for up to 3 months.
- Try substituting some raisins with dried cranberries or chopped dates for variation.
