- 1 can (5 oz) tuna in water, drained and flaked
- 6 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk (or non-dairy milk)
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup green onions, chopped
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil (for greasing the muffin tin)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil or cooking spray.
- In a large mixing bowl, whisk together the eggs and milk until smooth.
- Stir in the shredded cheddar cheese, chopped bell pepper, green onions, garlic powder, salt, and black pepper.
- Add the flaked tuna and gently mix until well combined.
- Pour the egg mixture evenly into the muffin tin cups, filling each about 3/4 full.
- Bake for 15-18 minutes, or until the egg bites are set and lightly golden on top.
- Remove from the oven and let cool slightly before serving. These egg bites are great on their own or served with a side of fresh vegetables or a light salad.
Notes
- These egg bites can be stored in an airtight container in the fridge for up to 3 days.
- For extra flavor, you can add a spoonful of mayonnaise or Greek yogurt to the tuna mixture before adding it to the eggs.
