Description

High-Protein Tuna Melt Egg Bites are a delicious, protein-packed breakfast or snack option. These mini egg bites are filled with tuna, melted cheese, and savory seasonings, making them a perfect grab-and-go meal for busy mornings.


Ingredients

  • 1 can (5 oz) tuna in water, drained and flaked
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup milk (or non-dairy milk)
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup green onions, chopped
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for greasing the muffin tin)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin with olive oil or cooking spray.
  2. In a large mixing bowl, whisk together the eggs and milk until smooth.
  3. Stir in the shredded cheddar cheese, chopped bell pepper, green onions, garlic powder, salt, and black pepper.
  4. Add the flaked tuna and gently mix until well combined.
  5. Pour the egg mixture evenly into the muffin tin cups, filling each about 3/4 full.
  6. Bake for 15-18 minutes, or until the egg bites are set and lightly golden on top.
  7. Remove from the oven and let cool slightly before serving. These egg bites are great on their own or served with a side of fresh vegetables or a light salad.

  • These egg bites can be stored in an airtight container in the fridge for up to 3 days.
