- 2 large boneless skinless chicken breasts
- 12 ounces fettuccine pasta
- 3 cups broccoli florets
- 4 tablespoons butter
- 4 garlic cloves, minced
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt to taste
- Freshly ground black pepper to taste
- 1 tablespoon olive oil
Instructions
- Fill a large pot with water and bring it to a boil. Heat a large skillet over medium-high heat.
- Season chicken with salt and pepper. In the skillet, add olive oil and sear chicken for 5–6 minutes per side until cooked through. Remove and let rest.
- In the same skillet, melt butter, add minced garlic, and sauté until fragrant, about 1 minute. Pour in heavy cream and stir.
- Add Parmesan cheese to the cream sauce and stir until smooth. Season with salt and pepper. Cook pasta in boiling water until al dente, adding broccoli in the last 2 minutes. Drain, reserving 1 cup pasta water.
- Slice chicken and add to the skillet along with pasta and broccoli. Toss gently, adding pasta water as needed for consistency.
- Taste and adjust seasoning. Let flavors meld for 1–2 minutes on low heat.
- Plate generously, garnish with extra Parmesan, and serve hot.
Notes
- Use freshly grated Parmesan for a smoother sauce.
- Do not overcook broccoli to maintain its bright color and crispness.
- Reserve pasta water to adjust sauce thickness.
