  • 1 cup shelled pistachios
  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • For the cheesecake filling:
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • For the topping:
  • 1 can (21 oz) cherry pie filling
  • 1/4 cup chopped pistachios (optional, for garnish)

Instructions

  1. Preheat oven to 325°F (160°C). Line a 9×9 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a food processor, pulse pistachios until finely ground. Combine with graham cracker crumbs and sugar in a bowl. Stir in melted butter until well combined.
  3. Press mixture firmly into the bottom of the prepared pan. Bake crust for 10 minutes, then let cool slightly.
  4. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each. Mix in vanilla and sour cream until combined.
  5. Pour cheesecake batter over the crust and spread evenly. Bake for 30–35 minutes or until the center is set and edges are slightly puffed.
  6. Cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  7. Spread cherry pie filling evenly over the chilled cheesecake. Garnish with chopped pistachios if desired.
  8. Cut into bars and serve chilled.
