Description

These vibrant Healthy Skewers are loaded with tender chicken and colorful vegetables, marinated in a zesty lemon-garlic mix, then grilled to perfection. They’re light, flavorful, and perfect for any occasion.


Ingredients

  • 1 pound boneless skinless chicken breast, cut into 1-inch cubes
  • 1 large red bell pepper, cut into chunks
  • 1 medium zucchini, sliced into thick half-moons
  • 1 large red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and vegetables, tossing to coat.
  3. Soak wooden skewers for 30 minutes if using.
  4. Thread marinated ingredients onto skewers, alternating pieces.
  5. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked and veggies are charred.
