Description

This Healthy Ground Chicken Meatloaf is a lighter take on a comfort food classic. Packed with lean protein, veggies, and flavorful seasonings, it’s a perfect weeknight dinner that’s both wholesome and satisfying.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup rolled oats or whole wheat breadcrumbs
  • 1 egg
  • 1/2 cup finely chopped onion
  • 1/2 cup grated carrot
  • 2 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons ketchup (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, mix together ground chicken, oats or breadcrumbs, egg, onion, carrot, garlic, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper.
  3. Transfer the mixture into the prepared loaf pan and shape it into a loaf.
  4. Spread 2 tablespoons of ketchup on top of the loaf for added flavor and moisture.
  5. Bake for 45–50 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for 5–10 minutes before slicing and serving.

Notes

  • Use ground turkey if preferred for a similar lean protein option.
  • Chop vegetables finely to help them blend seamlessly into the loaf.
  • Serve with mashed cauliflower or roasted vegetables for a low-carb meal.
