- 1 lb ground chicken
- 1/2 cup rolled oats or whole wheat breadcrumbs
- 1 egg
- 1/2 cup finely chopped onion
- 1/2 cup grated carrot
- 2 cloves garlic, minced
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons ketchup (for topping)
Instructions
- Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper or lightly grease it.
- In a large bowl, mix together ground chicken, oats or breadcrumbs, egg, onion, carrot, garlic, ketchup, Worcestershire sauce, Italian seasoning, salt, and pepper.
- Transfer the mixture into the prepared loaf pan and shape it into a loaf.
- Spread 2 tablespoons of ketchup on top of the loaf for added flavor and moisture.
- Bake for 45–50 minutes or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 5–10 minutes before slicing and serving.

- Use ground turkey if preferred for a similar lean protein option.
- Chop vegetables finely to help them blend seamlessly into the loaf.
- Serve with mashed cauliflower or roasted vegetables for a low-carb meal.
