Description

This Healthy and Delicious Street Corn Chicken Rice Bowl combines juicy grilled chicken, roasted corn, creamy Greek yogurt sauce, and fluffy rice for a vibrant, protein-packed meal inspired by Mexican street corn.


Ingredients

  • 2 cups cooked brown or white rice
  • 2 grilled chicken breasts, sliced
  • 1 cup corn kernels (grilled or roasted)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup cotija or feta cheese, crumbled
  • 1 tbsp olive oil
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Sauce:
  • 1/4 cup plain Greek yogurt
  • 1 tbsp mayonnaise (optional)
  • 1 tbsp lime juice
  • 1 garlic clove, minced
  • 1/2 tsp smoked paprika

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Season chicken breasts with olive oil, chili powder, salt, and pepper. Grill or cook in a skillet over medium heat until fully cooked. Slice and set aside.
  3. Grill or roast corn until slightly charred. If using frozen corn, sauté in a pan until golden.
  4. In a small bowl, mix Greek yogurt, mayonnaise (if using), lime juice, garlic, and paprika to create the creamy sauce.
  5. To assemble, divide rice into bowls. Top with sliced chicken, corn, red onion, and cilantro.
