- 2 grilled chicken breasts, sliced
- 1 cup corn kernels (grilled or roasted)

- 1/4 cup cotija or feta cheese, crumbled
- 1 tbsp olive oil
- 1/2 tsp chili powder
- Salt and pepper to taste
- Sauce:
- 1/4 cup plain Greek yogurt
- 1 tbsp mayonnaise (optional)
- 1 tbsp lime juice
- 1 garlic clove, minced
- 1/2 tsp smoked paprika
Instructions
- Cook rice according to package instructions and set aside.
- Season chicken breasts with olive oil, chili powder, salt, and pepper. Grill or cook in a skillet over medium heat until fully cooked. Slice and set aside.
- Grill or roast corn until slightly charred. If using frozen corn, sauté in a pan until golden.
- In a small bowl, mix Greek yogurt, mayonnaise (if using), lime juice, garlic, and paprika to create the creamy sauce.
- To assemble, divide rice into bowls. Top with sliced chicken, corn, red onion, and cilantro.
- Drizzle with the yogurt sauce and sprinkle with cotija or feta cheese.
- Serve warm with extra lime wedges if desired.
