Description

Hawaiian Huli Huli Chicken is a sweet, smoky, and savory grilled dish that brings tropical island flavors to your backyard. Marinated in a mouthwatering pineapple-soy glaze and grilled to perfection, this juicy chicken is perfect for cookouts, family dinners, or summer parties.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • ½ teaspoon crushed red pepper flakes (optional)
  • Chopped green onions and sesame seeds, for garnish (optional)

Instructions

  1. In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, sesame oil, and red pepper flakes.
  2. Place chicken in a large resealable bag or shallow dish and pour marinade over it. Seal and refrigerate for at least 2 hours or overnight for best flavor.
  3. Preheat grill to medium heat. Remove chicken from marinade and discard excess liquid.
  4. Grill chicken for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C) and the chicken is nicely charred and caramelized.
  5. Transfer to a serving plate and garnish with green onions and sesame seeds, if desired. Serve with rice or grilled pineapple slices.

Notes

  • Marinate the chicken overnight for maximum flavor and tenderness.
  • If you don’t have a grill, cook the chicken in a grill pan or bake at 400°F (200°C) for 25–30 minutes.
  • This recipe works great with chicken breasts or drumsticks too.
