Hawaiian Huli Huli Chicken is a sweet, smoky, and savory grilled dish that brings tropical island flavors to your backyard. Marinated in a mouthwatering pineapple-soy glaze and grilled to perfection, this juicy chicken is perfect for cookouts, family dinners, or summer parties.

- 2 lbs boneless, skinless chicken thighs
- ½ cup pineapple juice
- ¼ cup soy sauce
- ¼ cup brown sugar
- 2 tablespoons ketchup
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon sesame oil
- ½ teaspoon crushed red pepper flakes (optional)
- Chopped green onions and sesame seeds, for garnish (optional)
Instructions
- In a medium bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, sesame oil, and red pepper flakes.
- Place chicken in a large resealable bag or shallow dish and pour marinade over it. Seal and refrigerate for at least 2 hours or overnight for best flavor.
- Preheat grill to medium heat. Remove chicken from marinade and discard excess liquid.
- Grill chicken for 6–7 minutes per side, or until internal temperature reaches 165°F (74°C) and the chicken is nicely charred and caramelized.
- Transfer to a serving plate and garnish with green onions and sesame seeds, if desired. Serve with rice or grilled pineapple slices.
Notes
- Marinate the chicken overnight for maximum flavor and tenderness.
- If you don’t have a grill, cook the chicken in a grill pan or bake at 400°F (200°C) for 25–30 minutes.
- This recipe works great with chicken breasts or drumsticks too.
