- 4 slices of bread (sourdough or your favorite type)
- 2 tablespoons butter, softened
- 1 ripe avocado
- 1 tablespoon lime juice
- 1 small garlic clove, minced
- 2 tablespoons chopped red onion
- 1 tablespoon chopped cilantro (optional)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 small tomato, diced (optional)
- 4 slices cheddar cheese or Monterey Jack
Instructions
- In a bowl, mash the avocado with lime juice, garlic, red onion, cilantro (if using), salt, pepper, and tomato if desired. Mix until creamy but slightly chunky.
- Butter one side of each bread slice.
- Heat a skillet over medium heat.
- Place two slices of bread, buttered side down, in the skillet. Top each with 1–2 slices of cheese, a layer of guacamole, then another slice of bread (buttered side up).
- Cook for 3–4 minutes on each side, pressing slightly, until the bread is golden and the cheese is melted.
- Remove from skillet, slice, and serve warm.
Notes
- Use a combination of cheeses like mozzarella and pepper jack for extra flavor.
- Add cooked bacon or sliced jalapeños for a kick.
- Great with tomato soup or a fresh salad on the side.
