Description
A hearty one-pan dinner made with seasoned ground beef, tender diced potatoes, onion, red bell pepper, melted cheddar, and fresh parsley. It is cozy, family-friendly, and perfect for busy nights.

- 1 pound lean ground beef
- 1 1/2 pounds Yukon Gold potatoes, diced into small cubes
- 1 medium yellow onion, diced
- 1 medium red bell pepper, diced
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon tomato paste
- 1/2 cup beef broth
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Heat a large skillet over medium heat for 1 to 2 minutes.
- In a small bowl, combine the paprika, dried oregano, salt, and black pepper.
- Add the olive oil and diced potatoes to the skillet. Cook for 8 to 10 minutes, stirring occasionally, until the potatoes begin to soften and turn golden. Transfer them to a plate.
- Add the ground beef, diced onion, and diced red bell pepper to the same skillet. Cook for 5 to 7 minutes, breaking up the meat, until the beef is browned and the vegetables are softened.
- Stir in the garlic and tomato paste. Cook for 1 minute.
- Return the potatoes to the skillet and add the seasoning mixture. Pour in the beef broth and stir well.
- Cover and cook for 8 to 10 minutes, stirring once or twice, until the potatoes are fully tender and most of the broth has absorbed.
- Sprinkle the shredded cheddar cheese over the top. Cover for 2 to 3 minutes until melted.
- Finish with chopped fresh parsley and serve hot.
Notes
- Cut the potatoes into even small cubes so they cook at the same rate.
- Ground turkey or ground chicken can be used instead of ground beef.
- For extra flavor, add sliced mushrooms or a pinch of chili flakes.
- Leftovers can be stored in the refrigerator for up to 4 days.
