- 1 lb ground chicken
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 medium zucchinis, diced
- 1 cup cooked rice (white or brown)
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- Salt and black pepper, to taste
- ½ cup shredded mozzarella or Parmesan cheese (optional)
- Fresh parsley or basil, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 2–3 minutes until soft.
- Add garlic and cook for 30 seconds until fragrant.
- Add ground chicken and cook for 5–7 minutes, breaking it apart, until fully cooked and lightly browned.
- Stir in diced zucchini and cook for another 5 minutes until tender but not mushy.
- Add cooked rice, Italian seasoning, paprika, salt, and pepper. Stir to combine and heat through, about 2 minutes.
- If using cheese, sprinkle over the top, cover, and let melt for 1–2 minutes.
- Garnish with fresh herbs and serve warm.
Notes
- Use leftover rice for faster prep, or cook rice while the chicken and zucchini are sautéing.
- You can add red pepper flakes for a touch of heat.
- This dish also works well with ground turkey or lean beef.
