The Grilled Patty Melt is a classic diner-style sandwich made with a juicy beef patty, caramelized onions, and melted cheese between slices of buttery, grilled rye bread. It’s rich, comforting, and packed with bold, savory flavor.

- 1 lb ground beef (80/20)
- Salt and pepper to taste
- 1 tablespoon Worcestershire sauce (optional)
- 1 large onion, thinly sliced
- 2 tablespoons butter (for onions)
- 8 slices rye bread (or sourdough)
- 8 slices Swiss or cheddar cheese
- 2–3 tablespoons butter (for grilling)
Instructions
- In a skillet over medium heat, melt 2 tablespoons butter and cook sliced onions for 15–20 minutes, stirring often, until deeply caramelized. Set aside.
- While onions cook, season the ground beef with salt, pepper, and Worcestershire sauce if using. Form into 4 thin, oval-shaped patties roughly the size of your bread.
- In the same skillet or on a grill, cook patties over medium-high heat for 3–4 minutes per side or until cooked through. Remove and set aside.
- Assemble the sandwiches: lay down 1 slice of cheese on a slice of bread, top with a cooked patty, caramelized onions, another slice of cheese, and a second slice of bread.
- Butter the outsides of the sandwiches lightly, then grill on a skillet or griddle over medium heat until golden brown and the cheese is melted, about 3–4 minutes per side.
- Slice and serve hot, optionally with pickles or dipping sauce on the side.
Notes
- For extra flavor, use a mix of Swiss and cheddar cheese.
- Rye bread is traditional, but sourdough or Texas toast work great too.
- Press gently while grilling for a crispier crust.
