Description

These grilled mozzarella BBQ chicken sandwiches combine melty cheese, smoky chicken, and tangy barbecue sauce between crispy, buttery bread for the ultimate comfort food.


Ingredients

  • 2 cups cooked chicken breast, shredded or chopped
  • 1 ½ cups mozzarella cheese, freshly shredded
  • ½ cup BBQ sauce
  • ½ small red onion, thinly sliced
  • 2 tablespoons butter, softened
  • 4 slices sandwich bread or 2 ciabatta rolls, halved
  • 2 tablespoons fresh parsley or cilantro (optional), chopped

Instructions

  1. Heat a skillet or grill pan over medium heat. If using a panini press, set it up now.
  2. In a bowl, toss the shredded chicken with BBQ sauce until evenly coated.
  3. Lightly butter one side of each bread slice or roll.
  4. On the unbuttered side, layer BBQ chicken, mozzarella, red onion slices, and parsley. Top with the other bread slice, buttered side out.
  5. Place sandwich in the skillet and grill each side for 3–4 minutes until golden and cheese is melted. Press slightly with a spatula.
  6. Let rest for 1 minute before slicing.
  7. Slice and serve hot with your favorite side.

Notes

  • Use freshly shredded mozzarella for best melt.
  • Day-old bread gives a better crisp.
  • Add garlic powder to the butter for extra flavor.
