- 1.5 pounds chicken thighs (boneless, skinless)
- 1 cup uncooked jasmine rice
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 lime, juiced
- 2 green onions, thinly sliced
- 1/4 cup fresh cilantro, chopped
- Salt and black pepper, to taste
Instructions
- In a mixing bowl, combine soy sauce, sesame oil, garlic, ginger, and lime juice. Add chicken thighs and coat evenly. Marinate for at least 30 minutes, ideally overnight.
- Preheat grill or grill pan over medium-high heat.
- Rinse jasmine rice until water runs clear. Cook with 1.5 cups water in a rice cooker or saucepan until tender and fluffy.
- Lightly oil grill grates or grill pan. Grill chicken 6–7 minutes per side until charred and cooked through (internal temp 165°F).
- Let chicken rest, then slice. Fluff rice with a fork and season with a pinch of salt if needed.
- Plate rice, top with grilled chicken, and garnish with green onions and cilantro. Serve with a lime wedge.

- Marinate chicken overnight for deeper flavor.
- Use chicken thighs for best texture and juiciness.
