Description

  • 2 teaspoons Spanish paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon ground green cardamom
  • Salt, to taste
  • Pepper, to taste
  • 2 pounds boneless skinless chicken breasts, cut into 1 1/2-inch cubes
  • 15 garlic cloves, minced
  • 3 lemons, juiced
  • 1 yellow onion, sliced
  • 1/2 cup extra virgin olive oil
  • 1 green bell pepper, cut into 1 1/2-inch pieces
  • 1 red bell pepper, cut into 1 1/2-inch pieces
  • 1 red onion, cut into 1 1/2-inch pieces
  • For the Tahini Sauce:
  • 1 tahini sauce recipe (tahini paste, lemon juice, garlic, water, and salt)

Instructions

  1. In a large mixing bowl, whisk together paprika, thyme, nutmeg, cardamom, salt, pepper, minced garlic, lemon juice, sliced yellow onion, and olive oil to make the marinade.
  2. Add chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight, for maximum flavor.
  3. Preheat grill to medium-high heat. Thread the marinated chicken onto skewers, alternating with pieces of green bell pepper, red bell pepper, and red onion.
  4. Grill kabobs for about 10–12 minutes, turning occasionally, until chicken is fully cooked and slightly charred on the edges.
  5. Meanwhile, prepare tahini sauce by mixing tahini paste with lemon juice, garlic, water, and salt until smooth and creamy.
  6. Serve grilled chicken kabobs hot with tahini sauce drizzled on top or on the side for dipping.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
