- 1 cup green tea, brewed strong
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons grated fresh ginger
- 1 cup honey
- 1 cup granulated sugar
- Powdered sugar or cornstarch for dusting (optional)
Instructions
- Brew a strong cup of green tea and let it steep for 5–10 minutes. Strain and measure out 1 cup.
- In a saucepan over medium heat, combine brewed tea, lemon juice, ginger, honey, and sugar. Stir continuously until sugar dissolves.
- Bring the mixture to a boil and continue cooking until it reaches the hard ball stage (250–265°F or 121–129°C) on a candy thermometer.
- Remove from heat and carefully pour the mixture into a parchment-lined or silicone mold tray.
- Let the mixture cool completely at room temperature (about 1–2 hours) until firm.
- Cut into small squares or use molds to form individual chews. Dust with powdered sugar or cornstarch to prevent sticking, if desired.
- Store in an airtight container at room temperature for up to 2 weeks.
Notes
- Use silicone molds for easy shaping and removal.
- Add more or less ginger depending on how spicy you want the chews.
- These chews can help soothe sore throats and support immunity.
