Description

Greek Yogurt Lemon Blueberry Pancake Bites are mini, fluffy, and delicious pancake bites made with Greek yogurt for a protein boost. Infused with fresh lemon and loaded with blueberries, these bites are a perfect bite-sized breakfast or snack option that’s both healthy and satisfying.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 cup Greek yogurt
  • 1/4 cup milk (or non-dairy milk)
  • 1/2 tsp vanilla extract
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1/2 cup fresh blueberries (or frozen, thawed)
  • 1 tbsp butter, melted (for greasing the mini muffin tin)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin tin with melted butter or cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. In another bowl, whisk the egg, Greek yogurt, milk, vanilla extract, lemon zest, and lemon juice until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the fresh blueberries, being careful not to crush them.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.
  7. Bake for 12-15 minutes, or until a toothpick inserted into the center of a pancake bite comes out clean.
  8. Remove from the oven and let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  9. Serve warm, or store in an airtight container for up to 3 days. Optionally, drizzle with honey or maple syrup for extra sweetness.

Notes

  • For a dairy-free version, use a non-dairy yogurt and non-dairy milk of your choice.
  • These pancake bites are a great make-ahead option. You can freeze them for up to 1 month and reheat in the microwave or oven.
  • For an added flavor twist, you can substitute the blueberries with other berries or chocolate chips.
