- 1 package (15 count) mini phyllo shells
- 1/2 cup cherry tomatoes, diced
- 1/2 cup cucumber, finely diced
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, chopped
- 1/4 cup feta cheese, crumbled
- 1 tbsp olive oil
- 1 tsp red wine vinegar or lemon juice
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C). Place phyllo cups on a baking sheet and bake for 5 minutes to crisp up. Let cool.
- In a bowl, combine cherry tomatoes, cucumber, red onion, olives, and feta.
- Drizzle with olive oil and vinegar or lemon juice. Add oregano, salt, and pepper. Toss gently to combine.
- Spoon the Greek salad mixture into the cooled phyllo cups just before serving to avoid sogginess.
- Garnish with extra feta or a small basil or mint leaf if desired.
Notes
- Make the salad mixture ahead and fill cups just before serving.
- Add a bit of hummus or tzatziki to the base of each cup for extra flavor.
- Use store-bought phyllo cups for convenience or make your own with phyllo sheets.
