- 1 teaspoon ground cinnamon, for coating
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 12-cup muffin tin or line with paper liners.
- Whisk the flour, 1 cup sugar, baking powder, salt, and 1/2 teaspoon cinnamon in a large bowl.
- In a separate bowl, whisk the milk, 1/2 cup melted butter, eggs, and vanilla until smooth.
- Pour the wet mixture into the dry ingredients and gently fold just until combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 15 to 18 minutes, until the tops are set and a toothpick inserted in the center comes out clean.
- Stir together the coating sugar and cinnamon in a shallow bowl. Let muffins cool 3 to 5 minutes, then brush tops with the 1/4 cup melted butter and roll in the cinnamon sugar to coat.
- Serve warm, or cool completely on a rack and store airtight.
Notes
- Note: Coat while warm so the cinnamon sugar adheres beautifully.
- For extra spice, add a pinch of nutmeg to the batter.
- Use a light-colored muffin pan for even browning.
