Description

A rich and comforting British dessert made with a moist date sponge and drenched in a silky homemade toffee sauce. This sticky toffee pudding is soft, deeply caramelized, and perfect served warm with extra sauce.


Ingredients

  • 200 grams pitted dates, finely chopped
  • 1 teaspoon baking soda
  • 240 milliliters boiling water
  • 115 grams unsalted butter, softened (for sponge)
  • 200 grams light brown sugar (for sponge)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 200 grams all purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 100 grams unsalted butter (for sauce)
  • 150 grams light brown sugar (for sauce)
  • 240 milliliters heavy cream

Instructions

  1. Preheat oven to 180 degrees Celsius and grease an 8 inch square baking dish.
  2. Place chopped dates and baking soda in a bowl, pour over boiling water, and let sit for 10 minutes.
  3. Cream 115 grams unsalted butter and 200 grams light brown sugar until pale and fluffy. Beat in eggs one at a time, then add vanilla extract.
  4. Gently fold in flour, baking powder, and salt. Stir in the softened date mixture until combined.
  5. Pour batter into prepared baking dish and smooth the top evenly.
  6. Bake for 30 to 35 minutes until set and a toothpick inserted in the center comes out clean.
  7. For the sauce, heat 100 grams unsalted butter, 150 grams light brown sugar, and heavy cream in a saucepan over medium heat. Stir until smooth and simmer gently for 3 to 5 minutes until slightly thickened.
  8. Pour half of the warm sauce over the baked pudding and let it soak in. Serve warm with remaining sauce.

Notes

  • Do not overmix the batter once flour is added to keep the sponge tender.
  • Warm the sauce gently before serving if it thickens.
  • This dessert can be made a day ahead and reheated before serving.
