- 2 large boneless skinless chicken breasts, sliced and pounded thin
- Salt and black pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1.5 cups Italian seasoned breadcrumbs
- 1/2 cup finely grated Parmesan cheese
- Olive oil, for frying
- 2 cups marinara sauce
- 1.5 cups mozzarella cheese, sliced or shredded
- Fresh basil or parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C) and lightly oil a baking dish.
- Season chicken cutlets with salt and pepper. Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan.
- Heat olive oil in a skillet over medium-high heat.
- Dredge each cutlet in flour, dip in eggs, then coat with breadcrumb mixture. Fry 2–3 minutes per side until golden.
- Place cutlets in baking dish. Spoon marinara sauce on top and add mozzarella cheese.
- Bake for 15–20 minutes until cheese is melted and bubbly. Optional: broil 2–3 minutes for golden top.
- Garnish with basil or parsley and serve hot.

- Use a thermometer to ensure chicken reaches 165°F for doneness.
- Let breaded chicken rest before frying for better coating adherence.
- Fresh mozzarella melts better and adds creamier texture.
