Description
A refreshing and colorful dessert made with a gluten-free sugar cookie crust, topped with cream cheese frosting and a variety of fresh fruits.
Ingredients
Scale
- 1 1/2 cups gluten-free all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup heavy whipping cream
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup kiwi, sliced
- 1/2 cup pineapple chunks
- 1 tablespoon honey (optional, for drizzling)
Instructions
- Preheat your oven to 350°F (175°C). Line a pizza stone or baking sheet with parchment paper.
- In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and beat until combined.
- In a separate bowl, whisk together the gluten-free flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Press the dough into a circle on the prepared baking sheet, about 1/4-inch thick.
- Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookie crust to cool completely.
- In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture.
- Once the crust has cooled, spread the cream cheese frosting evenly over the top.
- Arrange the sliced fruits on top of the frosting in a decorative pattern.
- If desired, drizzle with honey for a touch of sweetness.
- Slice and serve immediately, or refrigerate until ready to serve.
Notes
- Feel free to use any combination of fruits you like. Other great options include mango, raspberries, or blackberries.
- If you’re using store-bought gluten-free cookie dough, you can skip the dough preparation steps.
- This dessert can be made ahead of time. Just refrigerate the fruit pizza until you’re ready to serve.
