Description

A refreshing and colorful dessert made with a gluten-free sugar cookie crust, topped with cream cheese frosting and a variety of fresh fruits.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup kiwi, sliced
  • 1/2 cup pineapple chunks
  • 1 tablespoon honey (optional, for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a pizza stone or baking sheet with parchment paper.
  2. In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, and beat until combined.
  3. In a separate bowl, whisk together the gluten-free flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  4. Press the dough into a circle on the prepared baking sheet, about 1/4-inch thick.
  5. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookie crust to cool completely.
  6. In a medium bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. In a separate bowl, whip the heavy cream until stiff peaks form, then gently fold the whipped cream into the cream cheese mixture.
  7. Once the crust has cooled, spread the cream cheese frosting evenly over the top.
  8. Arrange the sliced fruits on top of the frosting in a decorative pattern.
  9. If desired, drizzle with honey for a touch of sweetness.
  10. Slice and serve immediately, or refrigerate until ready to serve.

Notes

  • Feel free to use any combination of fruits you like. Other great options include mango, raspberries, or blackberries.
  • If you’re using store-bought gluten-free cookie dough, you can skip the dough preparation steps.
  • This dessert can be made ahead of time. Just refrigerate the fruit pizza until you’re ready to serve.
