Description
These gluten-free no-bake pecan balls are chewy, nutty, and naturally sweetened with dates. Rolled in shredded coconut, they’re the perfect quick snack or dessert with no baking required.

- 1 ½ cups raw pecans
- 1 cup Medjool dates, pitted
- ½ cup unsweetened shredded coconut
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
Instructions
- Line a baking sheet with parchment paper and set aside.
- Add pecans to a food processor and pulse until finely chopped.
- Add dates, vanilla extract, and sea salt to the processor and blend until the mixture becomes sticky and starts to clump.
- Transfer the mixture to a bowl and refrigerate for 10 minutes.
- Using your hands, roll into bite-sized balls and place them on the prepared sheet.
- Roll each ball in shredded coconut until fully coated.
- Refrigerate for at least 20 minutes before serving.
Notes
- Use soft, fresh dates for best results. Soak dry dates if needed.
- Toast pecans lightly for a deeper flavor before blending.
- Store in the fridge for up to a week or freeze for longer storage.
