Description

These gluten-free no-bake pecan balls are chewy, nutty, and naturally sweetened with dates. Rolled in shredded coconut, they’re the perfect quick snack or dessert with no baking required.


Ingredients

  • 1 ½ cups raw pecans
  • 1 cup Medjool dates, pitted
  • ½ cup unsweetened shredded coconut
  • 1 teaspoon vanilla extract
  • ¼ teaspoon sea salt

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. Add pecans to a food processor and pulse until finely chopped.
  3. Add dates, vanilla extract, and sea salt to the processor and blend until the mixture becomes sticky and starts to clump.
  4. Transfer the mixture to a bowl and refrigerate for 10 minutes.
  5. Using your hands, roll into bite-sized balls and place them on the prepared sheet.
  6. Roll each ball in shredded coconut until fully coated.
  7. Refrigerate for at least 20 minutes before serving.

Notes

  • Use soft, fresh dates for best results. Soak dry dates if needed.
  • Toast pecans lightly for a deeper flavor before blending.
  • Store in the fridge for up to a week or freeze for longer storage.
