Description

Rich, creamy, and indulgent, these Gluten-Free Chocolate Peanut Butter Cheesecake Bars combine a crunchy chocolate base, a velvety peanut butter cheesecake filling, and a smooth chocolate ganache topping. They’re the perfect make-ahead dessert for any occasion.


Ingredients

  • 2 cups gluten-free chocolate sandwich cookies, crushed
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup smooth peanut butter
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar (optional, for topping)

Instructions

  1. Preheat oven to 325°F and line an 8×8 inch baking pan with parchment paper.
  2. Combine crushed cookies and melted butter in a bowl, then press into the bottom of the pan to form the crust.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs, peanut butter, and vanilla extract. Mix until fully combined.
  4. Pour cheesecake filling over the crust and smooth the top with a spatula.
  5. Bake for 35–40 minutes, or until the center is just set. Let cool at room temperature, then refrigerate for at least 4 hours.
  6. Heat heavy cream until hot but not boiling, then pour over chocolate chips. Let sit for 2 minutes, then stir until smooth.
  7. Spread ganache over chilled cheesecake layer. Refrigerate until set.
  8. Slice into bars using a warm knife. Dust with powdered sugar if desired and serve chilled.
