- 2 cups gluten-free chocolate sandwich cookies, crushed
- 6 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup smooth peanut butter
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
- 1/4 cup powdered sugar (optional, for topping)
Instructions
- Preheat oven to 325°F and line an 8×8 inch baking pan with parchment paper.
- Combine crushed cookies and melted butter in a bowl, then press into the bottom of the pan to form the crust.
- In another bowl, beat cream cheese and sugar until smooth. Add eggs, peanut butter, and vanilla extract. Mix until fully combined.
- Pour cheesecake filling over the crust and smooth the top with a spatula.
- Bake for 35–40 minutes, or until the center is just set. Let cool at room temperature, then refrigerate for at least 4 hours.
- Heat heavy cream until hot but not boiling, then pour over chocolate chips. Let sit for 2 minutes, then stir until smooth.
- Spread ganache over chilled cheesecake layer. Refrigerate until set.
- Slice into bars using a warm knife. Dust with powdered sugar if desired and serve chilled.
