Description

Gluten Free Apple Cider Donuts (Baked) are soft, fluffy, and warmly spiced donuts made with reduced apple cider for rich apple flavor. A cozy autumn treat without the need for frying.


Ingredients

  • 1 cup apple cider
  • 1 1/4 cups gluten-free all-purpose flour blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup unsweetened applesauce
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a donut pan.
  2. In a small saucepan, simmer apple cider over medium heat until reduced to about 1/2 cup. Let cool slightly.
  3. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In another bowl, whisk reduced cider, brown sugar, granulated sugar, egg, applesauce, melted butter, and vanilla until combined.
  5. Add dry ingredients to wet and mix until just combined.
  6. Spoon or pipe batter into prepared donut pan, filling each cavity about 3/4 full.
  7. Bake for 12-15 minutes or until golden and a toothpick comes out clean. Cool slightly before removing from pan.
  8. Optional: Brush with melted butter and toss in cinnamon sugar.

Notes

  • Make sure to reduce the cider for the best flavor.
  • These donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • Use a gluten-free flour blend that contains xanthan gum for better texture.
