Gluten Free Apple Cider Donuts (Baked) are soft, fluffy, and warmly spiced donuts made with reduced apple cider for rich apple flavor. A cozy autumn treat without the need for frying.

- 1 cup apple cider
- 1 1/4 cups gluten-free all-purpose flour blend
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1/4 cup unsweetened applesauce
- 1/4 cup melted butter or coconut oil
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a donut pan.
- In a small saucepan, simmer apple cider over medium heat until reduced to about 1/2 cup. Let cool slightly.
- In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk reduced cider, brown sugar, granulated sugar, egg, applesauce, melted butter, and vanilla until combined.
- Add dry ingredients to wet and mix until just combined.
- Spoon or pipe batter into prepared donut pan, filling each cavity about 3/4 full.
- Bake for 12-15 minutes or until golden and a toothpick comes out clean. Cool slightly before removing from pan.
- Optional: Brush with melted butter and toss in cinnamon sugar.
Notes
- Make sure to reduce the cider for the best flavor.
- These donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
- Use a gluten-free flour blend that contains xanthan gum for better texture.
