Description

These glazed gluten-free strawberry scones are golden, tender, and bursting with fresh strawberry flavor. Finished with a sweet lemon glaze, they make the perfect treat for breakfast or brunch.


Ingredients

  • 2 cups gluten-free all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
  3. Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
  4. In a separate bowl, whisk eggs, heavy cream, and vanilla extract.
  5. Gently mix wet ingredients into the dry ingredients until just combined.
  6. Fold in the diced strawberries carefully.
  7. Turn dough onto a floured surface and form into a 1-inch thick disc.
  8. Cut into 8 wedges and place on the baking sheet.
  9. Bake for 18–22 minutes or until edges are golden and a toothpick comes out clean.
  10. Whisk powdered sugar and lemon juice to make glaze, then drizzle over warm scones.

Notes

  • Make sure your butter is cold for the flakiest texture.
  • Pat strawberries dry to avoid extra moisture in the dough.
  • Chill shaped dough before baking for better rise and hold.
