- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 2 large eggs
- 1/3 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced
- 1 cup powdered sugar
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking powder, salt, and granulated sugar.
- Cut in cold butter using a pastry cutter or fork until mixture resembles coarse crumbs.
- In a separate bowl, whisk eggs, heavy cream, and vanilla extract.
- Gently mix wet ingredients into the dry ingredients until just combined.
- Fold in the diced strawberries carefully.
- Turn dough onto a floured surface and form into a 1-inch thick disc.
- Cut into 8 wedges and place on the baking sheet.
- Bake for 18–22 minutes or until edges are golden and a toothpick comes out clean.
- Whisk powdered sugar and lemon juice to make glaze, then drizzle over warm scones.

- Pat strawberries dry to avoid extra moisture in the dough.
