Description

Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 4 medium Yukon Gold potatoes, thinly sliced
  • 6 garlic cloves, minced
  • 1 1/4 cups heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 1/4 teaspoons salt
  • 3/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat oven to 375°F and grease individual baking dishes or ramekins.
  2. In a skillet, melt butter and olive oil over medium heat. Sauté garlic for 2 minutes.
  3. Add chicken thighs and sear 4–5 minutes per side until lightly browned.
  4. Pour in chicken broth and heavy cream. Simmer for 10 minutes until slightly thickened. Season with salt and pepper.
  5. In a bowl, toss sliced potatoes with olive oil, salt, and pepper.
  6. Divide creamy chicken into baking dishes. Layer potato slices over the top.
  7. Bake for 35–40 minutes or until potatoes are tender and golden brown.
  8. Sprinkle with chopped parsley and let rest for 5 minutes before serving.
