Description

This comforting garlic cream chicken is simmered in a velvety, savory mushroom sauce and served over perfectly fluffy rice. It’s an easy, elegant meal packed with flavor and perfect for cozy dinners.


Ingredients

  • 2 tbsp olive oil
  • 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • Salt and black pepper, to taste
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced (cremini or button)
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/4 tsp dried thyme (or 1/2 tsp fresh)
  • 1 tbsp butter (optional, for richness)
  • 2 cups cooked white rice or jasmine rice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear until golden and cooked through. Remove from pan and set aside.
  2. In the same pan, add chopped onion and cook until softened, about 2–3 minutes. Add garlic and mushrooms and sauté until mushrooms are browned and tender, about 5–6 minutes.
  3. Pour in chicken broth and let it simmer for 2 minutes to reduce slightly. Stir in heavy cream and thyme, then reduce heat to low.
  4. Return cooked chicken to the skillet and let it simmer in the creamy sauce for another 5–7 minutes until everything is heated through and the sauce thickens slightly. Add butter for extra richness, if desired.
  5. Serve over hot, fluffy rice and garnish with fresh parsley.

Notes

  • Use rotisserie chicken to speed up prep time.
  • Add a splash of white wine before the cream for a deeper flavor.
  • Swap cream for coconut cream for a dairy-free version.
