This quick and savory Garlic Chicken Stir-Fry with Broccoli & Mushrooms is a healthy and satisfying weeknight dinner. Tender chicken strips are coated in a garlicky soy sauce glaze with crisp-tender broccoli and juicy mushrooms for a perfect balance of flavors and textures.

- 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
- 2 cups broccoli florets
- 1 cup mushrooms, sliced
- 3 garlic cloves, minced
- 2 tbsp soy sauce (low sodium preferred)
- 1 tbsp oyster sauce (optional for extra depth)
- 1 tbsp cornstarch
- 1/4 cup water or chicken broth
- 2 tbsp vegetable oil
- Salt and pepper, to taste
- Cooked rice, for serving
Instructions
- In a small bowl, mix soy sauce, oyster sauce (if using), water or broth, and cornstarch. Set aside.
- Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add chicken slices, season with salt and pepper, and cook until lightly browned and cooked through, about 5–6 minutes. Remove and set aside.
- Add the remaining oil to the pan. Add garlic and sauté for 30 seconds until fragrant.
- Add broccoli and mushrooms. Stir-fry for 4–5 minutes until tender-crisp.
- Return chicken to the pan. Pour in the sauce and stir well until everything is evenly coated and the sauce thickens, about 1–2 minutes.
- Serve hot over rice and garnish with green onions or sesame seeds if desired.
Notes
- Swap chicken with tofu or shrimp for a variation.
- Add red bell pepper or snow peas for extra crunch and color.
- Double the sauce if serving with noodles or extra rice.
