Description

This quick and savory Garlic Chicken Stir-Fry with Broccoli & Mushrooms is a healthy and satisfying weeknight dinner. Tender chicken strips are coated in a garlicky soy sauce glaze with crisp-tender broccoli and juicy mushrooms for a perfect balance of flavors and textures.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, thinly sliced
  • 2 cups broccoli florets
  • 1 cup mushrooms, sliced
  • 3 garlic cloves, minced
  • 2 tbsp soy sauce (low sodium preferred)
  • 1 tbsp oyster sauce (optional for extra depth)
  • 1 tbsp cornstarch
  • 1/4 cup water or chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper, to taste
  • Cooked rice, for serving

Instructions

  1. In a small bowl, mix soy sauce, oyster sauce (if using), water or broth, and cornstarch. Set aside.
  2. Heat 1 tbsp of oil in a large skillet or wok over medium-high heat. Add chicken slices, season with salt and pepper, and cook until lightly browned and cooked through, about 5–6 minutes. Remove and set aside.
  3. Add the remaining oil to the pan. Add garlic and sauté for 30 seconds until fragrant.
  4. Add broccoli and mushrooms. Stir-fry for 4–5 minutes until tender-crisp.
  5. Return chicken to the pan. Pour in the sauce and stir well until everything is evenly coated and the sauce thickens, about 1–2 minutes.
  6. Serve hot over rice and garnish with green onions or sesame seeds if desired.

Notes

  • Swap chicken with tofu or shrimp for a variation.
  • Add red bell pepper or snow peas for extra crunch and color.
  • Double the sauce if serving with noodles or extra rice.
