- 1 lb Sirloin Steak, cut into 1-inch cubes
- 5 Garlic Cloves, minced
- 4 tbsp Butter, unsalted
- 1 cup Heavy Cream
- 3/4 cup Parmesan Cheese, freshly grated
- 8 oz Shell Pasta
- 1 tbsp Olive Oil
- Salt and Black Pepper, to taste
- Chopped Parsley, for garnish
Instructions
- Set a cast iron skillet over medium-high heat and bring a pot of salted water to boil.
- Season cubed steak with salt and pepper. In a bowl, mix cream and grated parmesan.
- Once the skillet is hot, add olive oil and sear steak pieces for 2–3 minutes per side. Set aside.
- In the same skillet, reduce heat and add butter and garlic, stirring until fragrant. Add the cream and cheese mixture, stirring continuously.
- Let sauce simmer for 3–4 minutes. Meanwhile, cook pasta until al dente. Reserve some pasta water, then drain pasta.
- Stir in the cooked pasta and steak into the sauce. Add reserved pasta water if needed to loosen the sauce.
- Garnish with parsley and serve hot.
Notes
- Use freshly grated parmesan for the smoothest sauce.
- Don’t overcrowd the skillet when searing steak.
- A splash of pasta water helps create a silky sauce.
