- 3 cups fresh broccoli florets
- 2 cups cremini mushrooms, sliced
- 4 garlic cloves, thinly sliced
- 3 tablespoons soy sauce
- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- 1 teaspoon cornstarch
- 2 tablespoons water
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Set a large skillet or wok over medium-high heat.
- In a small bowl, whisk together soy sauce, sesame oil, and crushed red pepper flakes. In a separate cup, stir cornstarch with water to make a slurry.
- Add vegetable oil to the hot skillet. Once shimmering, add sliced mushrooms and cook undisturbed for 2 minutes. Stir and continue until browned.
- Push mushrooms to the side and add garlic. Stir for 30 seconds until fragrant.
- Add broccoli and a splash of water. Cover and steam for 2–3 minutes.
- Remove lid and stir everything together. Pour in the soy sauce mixture, then add the cornstarch slurry. Stir to coat all vegetables.
- Cook until sauce thickens and clings to vegetables. Taste and adjust seasoning if needed.
- Serve hot over rice or noodles with optional garnishes.
Notes
- Dry mushrooms well before cooking to get a good sear.
- Use a wide pan to avoid overcrowding and steaming.
