A festive and colorful dessert perfect for patriotic holidays, this Funfetti Flag Cake features a soft vanilla cake bursting with rainbow sprinkles, topped with creamy frosting and decorated to resemble the American flag.

- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 3/4 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup whole milk
- 1/2 cup rainbow sprinkles
- 2 cups heavy whipping cream (for frosting)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- Fresh strawberries, sliced (for decoration)
- Fresh blueberries (for decoration)
Instructions
- Preheat oven to 175°C (350°F). Grease and flour a 9×13-inch baking pan.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat butter and sugar until light and fluffy, about 3–4 minutes.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Gradually add dry ingredients, alternating with milk, beginning and ending with the flour mixture. Mix just until combined.
- Fold in rainbow sprinkles gently with a spatula.
- Pour batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool completely in the pan.
- For the frosting, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Spread whipped cream over the cooled cake. Arrange blueberries in the top left corner for the stars, and use strawberry slices in rows to create red stripes.
Notes
- Use gel food coloring in the batter for a red, white, and blue swirl effect if desired.
- Store cake in the refrigerator to keep frosting stable.
- Can be made a day ahead—decorate just before serving.
- Swap whipped cream for cream cheese or buttercream frosting for a richer version.
