Description

A festive and colorful dessert perfect for patriotic holidays, this Funfetti Flag Cake features a soft vanilla cake bursting with rainbow sprinkles, topped with creamy frosting and decorated to resemble the American flag.

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup whole milk
  • 1/2 cup rainbow sprinkles
  • 2 cups heavy whipping cream (for frosting)
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • Fresh strawberries, sliced (for decoration)
  • Fresh blueberries (for decoration)

Instructions

  1. Preheat oven to 175°C (350°F). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy, about 3–4 minutes.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Gradually add dry ingredients, alternating with milk, beginning and ending with the flour mixture. Mix just until combined.
  6. Fold in rainbow sprinkles gently with a spatula.
  7. Pour batter into the prepared pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool completely in the pan.
  9. For the frosting, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  10. Spread whipped cream over the cooled cake. Arrange blueberries in the top left corner for the stars, and use strawberry slices in rows to create red stripes.

Notes

  • Use gel food coloring in the batter for a red, white, and blue swirl effect if desired.
  • Store cake in the refrigerator to keep frosting stable.
  • Can be made a day ahead—decorate just before serving.
  • Swap whipped cream for cream cheese or buttercream frosting for a richer version.
