Description

Flaky puff pastry filled with sweet cream cheese and topped with fresh berries, baked until golden and finished with a light apricot glaze for a bright and comforting breakfast treat.


Ingredients

  • 2 sheets puff pastry, thawed
  • 8 ounces cream cheese, softened
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 2 tablespoons apricot jam

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl combine the softened cream cheese, granulated sugar, and vanilla extract. Stir until smooth and creamy.
  3. Roll out the puff pastry sheets slightly and cut them into evenly sized rectangles.
  4. Place the pastry rectangles on the prepared baking sheet, leaving space between each one.
  5. Spoon a small amount of the cream cheese mixture into the center of each pastry.
  6. Top the filling with sliced strawberries, blueberries, and raspberries.
  7. Beat the egg in a small bowl and brush it lightly around the edges of each pastry.
  8. Bake for 15 to 18 minutes until the pastry is puffed and golden.
  9. Warm the apricot jam slightly and gently brush it over the fruit while the pastries are still warm.
  10. Allow the pastries to cool for a few minutes, then serve and enjoy.

  • Keep the puff pastry chilled before assembling for the best flaky texture.
  • Do not overfill the pastries to prevent the filling from spilling during baking.
