- 2 sheets puff pastry, thawed
- 8 ounces cream cheese, softened
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 2 tablespoons apricot jam
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl combine the softened cream cheese, granulated sugar, and vanilla extract. Stir until smooth and creamy.
- Roll out the puff pastry sheets slightly and cut them into evenly sized rectangles.
- Place the pastry rectangles on the prepared baking sheet, leaving space between each one.
- Spoon a small amount of the cream cheese mixture into the center of each pastry.
- Top the filling with sliced strawberries, blueberries, and raspberries.
- Beat the egg in a small bowl and brush it lightly around the edges of each pastry.
- Bake for 15 to 18 minutes until the pastry is puffed and golden.
- Warm the apricot jam slightly and gently brush it over the fruit while the pastries are still warm.
- Allow the pastries to cool for a few minutes, then serve and enjoy.

- Keep the puff pastry chilled before assembling for the best flaky texture.
