Description

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons oregano
  • 300 g cavatappi macaroni
  • 5 onions, thinly sliced
  • ½ cup beef broth
  • 3 cups heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 tablespoon flour + 3 tablespoons water (for béchamel)
  • 1 teaspoon sugar
  • Fresh parsley, chopped
  • 2 teaspoons salt
  • 1 tablespoon garlic powder
  • 1 tablespoon smoked paprika powder
  • ½ teaspoon nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Slice the baguette into small cubes and toss with olive oil, salt, pepper, and oregano. Spread on a baking sheet and bake for 10–12 minutes until golden and crispy. Set aside.
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, cook the sliced onions over medium heat with a drizzle of oil and the sugar, stirring often, until caramelized and golden brown, about 20–25 minutes.
  4. Stir in the beef broth and let simmer for 3–4 minutes.
  5. In a saucepan, heat the heavy cream. Mix the flour and water together into a slurry, then whisk it into the cream to form a béchamel. Add nutmeg, garlic powder, smoked paprika, salt, and Parmesan cheese. Stir until smooth and creamy.
  6. Add the caramelized onions to the sauce, then toss in the cooked pasta until fully coated.
  7. Serve topped with homemade breadcrumbs and fresh parsley for garnish.
