Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 (10.5 oz) can French onion soup
  • 1/2 cup beef broth
  • 1 (9 oz) package refrigerated cheese tortellini
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon black pepper
  • Fresh thyme or parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and cook until golden and caramelized, about 10–12 minutes. Remove from skillet and set aside.
  2. In the same skillet, cook ground beef until browned. Drain excess fat.
  3. Add garlic and cook for 1 minute. Stir in French onion soup and beef broth.
  4. Add tortellini and bring to a simmer. Cover and cook for 5–7 minutes, until tortellini is tender.
  5. Stir in caramelized onions and top with shredded mozzarella. Cover and cook for 2–3 minutes until cheese is melted.
  6. Garnish with fresh thyme or parsley if desired and serve warm.

Notes

  • Use frozen tortellini if preferred — adjust cook time accordingly.
  • Swap ground beef for ground turkey or plant-based meat for variation.
  • Add a splash of Worcestershire sauce for deeper flavor.
