- 1 lb ground beef
- 1 tablespoon olive oil
- 1 large yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 (10.5 oz) can French onion soup
- 1/2 cup beef broth
- 1 (9 oz) package refrigerated cheese tortellini
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon black pepper
- Fresh thyme or parsley, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced onions and cook until golden and caramelized, about 10–12 minutes. Remove from skillet and set aside.
- In the same skillet, cook ground beef until browned. Drain excess fat.
- Add garlic and cook for 1 minute. Stir in French onion soup and beef broth.
- Add tortellini and bring to a simmer. Cover and cook for 5–7 minutes, until tortellini is tender.
- Stir in caramelized onions and top with shredded mozzarella. Cover and cook for 2–3 minutes until cheese is melted.
- Garnish with fresh thyme or parsley if desired and serve warm.

- Use frozen tortellini if preferred — adjust cook time accordingly.
- Swap ground beef for ground turkey or plant-based meat for variation.
- Add a splash of Worcestershire sauce for deeper flavor.
