Description
French Chouquettes are light and airy choux pastry puffs topped with crunchy pearl sugar. These bite-sized treats are a beloved classic in French bakeries, perfect as a snack or light dessert.

- 1/2 cup (120ml) water
- 1/2 cup (120ml) milk
- 1/2 cup (113g) unsalted butter
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 cup (125g) all-purpose flour
- 4 large eggs
- 1/2 cup pearl sugar (for topping)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a medium saucepan, combine water, milk, butter, sugar, and salt. Bring to a boil over medium heat.
- Remove from heat and add flour all at once. Stir vigorously until the mixture forms a dough ball and pulls away from the sides of the pan.
- Return the pan to medium heat and cook the dough for 1-2 minutes, stirring constantly to dry it slightly.
- Transfer dough to a mixing bowl and let cool for 5 minutes.
- Add eggs one at a time, beating well after each addition, until the dough is smooth and glossy.
- Transfer the dough to a piping bag fitted with a plain tip. Pipe small mounds (about 1 inch wide) onto the prepared baking sheet.
- Sprinkle generously with pearl sugar.
- Bake for 20-25 minutes, or until puffed and golden brown. Do not open the oven door during baking.
- Let cool slightly and serve warm or at room temperature.
Notes
- Do not open the oven door while baking or the chouquettes may collapse.
- You can freeze unbaked piped dough for future baking.
- Serve plain or with a dusting of powdered sugar.
