Description

This French Brioche Loaf is soft, buttery, and delicately sweet — perfect for breakfast, brunch, or indulgent sandwiches. With a golden crust and airy crumb, it’s a luxurious yet approachable homemade bread.


Ingredients

  • 3½ cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 teaspoon salt
  • 2¼ teaspoons active dry yeast
  • ½ cup whole milk (warm)
  • 4 large eggs (room temperature)
  • ½ cup unsalted butter (softened)
  • 1 egg + 1 tablespoon milk (for egg wash)

Instructions

  1. Warm the milk to about 110°F. Grease a 9×5 inch loaf pan and set aside.
  2. In a bowl, mix warm milk, yeast, and a pinch of sugar. Let sit 5–10 minutes until foamy.
  3. In a stand mixer, combine flour, sugar, salt, eggs, and yeast mixture. Mix with dough hook until combined.
  4. Add softened butter a bit at a time, letting each portion blend before adding more. Knead for 10 minutes until smooth and elastic.
  5. Transfer dough to a greased bowl. Cover and let rise for 1–2 hours, or until doubled. Punch down, cover, and chill overnight.
  6. Divide chilled dough into 3 pieces, shape or braid, and place into loaf pan. Let rise another hour.
  7. Preheat oven to 350°F. Brush dough with egg wash.
  8. Bake for 35–40 minutes until golden and fully cooked. Cool before slicing and serving.

Notes

  • Chilling the dough overnight improves texture and flavor.
  • Use room temperature eggs for smoother mixing.
  • Don’t skip the second rise for the fluffiest loaf.
  • Store wrapped at room temp for 2 days or freeze for later.
