Description
A cozy, diner-style folded egg and sausage sandwich with melty cheddar and lightly toasted bread, ready in 15 minutes for a warm, satisfying breakfast.
Ingredients
Scale
- 2 large eggs
- 1 breakfast sausage patty, cooked
- 1 slice cheddar cheese
- 2 slices sandwich bread
- 1 teaspoon butter
- 1 tablespoon milk
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Preheat a non-stick skillet over medium heat and add a small dab of butter to lightly grease the surface.
- Whisk eggs with milk, salt, and black pepper in a bowl until smooth and slightly frothy.
- Pour the egg mixture into the warm skillet and tilt the pan so the eggs spread evenly into a thin round.
- When the eggs begin to set, place the cheddar slice in the center and top with the cooked sausage patty.
- Fold the four edges of the egg inward to form a neat square around the filling and cook 30 to 60 seconds until sealed and the cheese starts to melt.
- Lightly butter the bread slices and toast them in the same pan until golden on both sides.
- Assemble the sandwich by placing the folded egg parcel between the toasted bread, slice, and serve warm.
Notes
- Use a lid for 30 seconds to encourage extra melty cheese.
- Add chopped chives or a pinch of chili flakes for brightness or heat.
- Let the eggs set gently so they stay tender, not rubbery.
- For make-ahead, cook sausage and pre-whisk eggs, then assemble fresh.
