Ingredients

  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon sweetener (such as erythritol or sugar)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup blueberries

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Whisk together the cottage cheese, yolks, sweetener, and vanilla extract in a bowl until smooth.
  3. In a separate bowl, beat the whites and cream of tartar with a mixer until stiff peaks form.
  4. Gently fold the yolk mixture into the whites.
  5. Fold in blueberries.
