- 1 tablespoon sweetener (such as erythritol or sugar)

- 1/4 cup blueberries
Instructions
- Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
- Whisk together the cottage cheese, yolks, sweetener, and vanilla extract in a bowl until smooth.
- In a separate bowl, beat the whites and cream of tartar with a mixer until stiff peaks form.
- Gently fold the yolk mixture into the whites.
- Fold in blueberries.
- Scoop batter into circles on the prepared sheet.
- Bake for 25-30 minutes, until tops are firm and lightly browned.
- Remove from oven and allow to cool slightly before serving.
