- 500 grams Ground Beef
- 1 can (400 grams) Red Kidney Beans, drained and rinsed
- 1 can (400 grams) Crushed Tomatoes
- 1 medium Yellow Onion, diced
- 2 Garlic Cloves, minced
- 1 Jalapeño, finely chopped
- 1 teaspoon Chili Powder
- 1 teaspoon Ground Cumin
- 1 teaspoon Paprika
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 2 handfuls Tortilla Chips
- 1½ cups Cheddar Cheese, shredded
- Fresh Cilantro, chopped, for garnish
- Sour Cream, for topping
Instructions
- Preheat Your Equipment: If you’re using the broiler to melt the cheese later, preheat your oven’s broiler to high.
- Combine Ingredients: Heat a large skillet over medium heat. Add ground beef and cook until browned. Add diced onion, garlic, and jalapeño. Cook until softened, about 5 minutes. Stir in crushed tomatoes, beans, and all spices. Simmer for 10 minutes, stirring occasionally.
- Prepare Your Cooking Vessel: If not already using an oven-safe skillet, transfer the mixture to one now. Spread it out evenly.
- Assemble the Dish: Scatter tortilla chips over the beef mixture. Top with a generous sprinkle of shredded cheddar.
- Cook to Perfection: Place the skillet under the broiler for 3–5 minutes until the cheese is bubbly and golden.
- Finishing Touches: Remove from oven. Let it cool slightly. Garnish with cilantro and dollops of sour cream.
- Serve and Enjoy: Bring the whole skillet to the table with extra chips on the side. Dig in while it’s hot and gooey.
