Fajita Chicken Casserole is a cheesy, flavorful, and easy-to-make baked dish that captures all the bold flavors of chicken fajitas. With tender chicken, sautéed peppers, onions, fajita seasoning, and melty cheese, it’s perfect for busy weeknights or meal prep.

- 2–3 cups cooked, shredded or chopped chicken (rotisserie works great)
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 1 (8 oz) package cream cheese, softened
- 1/2 cup sour cream
- 1 (10 oz) can diced tomatoes with green chilies, drained
- 1 tablespoon fajita seasoning (store-bought or homemade)
- 1 1/2 cups shredded Mexican blend or cheddar cheese
- Salt and pepper to taste
- Chopped cilantro and lime wedges for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a skillet, heat olive oil over medium heat. Sauté sliced peppers and onions for 5–7 minutes until softened. Season lightly with salt and pepper. Set aside.
- In a large bowl, combine cooked chicken, cream cheese, sour cream, drained tomatoes with green chilies, fajita seasoning, and half of the shredded cheese. Mix until well combined.
- Stir in the sautéed peppers and onions.
- Transfer the mixture into the prepared baking dish and spread evenly. Top with the remaining cheese.
- Bake uncovered for 20–25 minutes, or until hot and bubbly.
- Garnish with chopped cilantro and a squeeze of lime before serving if desired.
- Serve as is or with rice, tortillas, or over salad greens.
Notes
- Use low-fat cream cheese and sour cream for a lighter version.
- Add cooked rice or black beans to make it heartier.
