Description

Egg Roll in a Bowl is a quick and healthy deconstructed egg roll dish that captures all the classic flavors without the wrapper. It’s a low-carb stir-fry with ground pork, crunchy cabbage, and savory seasonings, perfect for an easy weeknight meal.


Ingredients

  • 1 pound ground pork (or ground chicken/turkey)
  • 1 tablespoon vegetable oil
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add ground pork and cook, breaking it up with a spatula, until browned and cooked through, about 5–7 minutes.
  3. Add garlic and ginger, cooking for 1 minute until fragrant.
  4. Stir in shredded cabbage and carrots, cooking until vegetables are tender but still crisp, about 5 minutes.
  5. Mix in soy sauce, sesame oil, rice vinegar, and red pepper flakes (if using). Cook for another 2 minutes, stirring frequently.
  6. Add sliced green onions, season with salt and pepper to taste, and give everything a final stir.
  7. Serve hot as is or over steamed rice or cauliflower rice for a low-carb option.

Notes

  • Ground turkey or chicken can be used instead of pork.
  • Add water chestnuts or bean sprouts for extra crunch.
  • Garnish with sesame seeds or chopped cilantro for added flavor.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
