- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup milk
- 1 tablespoon butter, melted
Instructions
- In a large bowl, mix flour and salt. Make a well in the center and add eggs, milk, and melted butter.
- Gradually mix the wet ingredients into the flour using a fork or your hands until a dough forms.
- Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.
- Cover the dough with a towel or plastic wrap and let rest for 30 minutes.
- Roll out the dough into a thin sheet (about 1/8 inch thick). Dust with flour as needed to prevent sticking.
- Use a knife or pizza cutter to cut into desired noodle shapes (typically 1/4 to 1/2 inch wide strips).
- Cook noodles in boiling salted water or broth for 2–4 minutes, or until tender. Drain and serve as desired.
Notes
- Resting the dough helps make the noodles more tender and easier to roll.
- Dust the noodles with extra flour before storing or cooking to avoid sticking.
- Noodles can be made ahead and frozen or dried for future use.
- Great as a base for chicken noodle soup or tossed with butter and herbs.
