Description

Homemade egg noodles are simple, hearty, and perfect for soups, stews, or served with butter and herbs. With just a few pantry ingredients, these noodles deliver a rich, chewy texture and comforting flavor.


Ingredients

  • 2 cups all-purpose flour (plus more for dusting)
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon butter, melted

Instructions

  1. In a large bowl, mix flour and salt. Make a well in the center and add eggs, milk, and melted butter.
  2. Gradually mix the wet ingredients into the flour using a fork or your hands until a dough forms.
  3. Knead the dough on a floured surface for 5–7 minutes until smooth and elastic.
  4. Cover the dough with a towel or plastic wrap and let rest for 30 minutes.
  5. Roll out the dough into a thin sheet (about 1/8 inch thick). Dust with flour as needed to prevent sticking.
  6. Use a knife or pizza cutter to cut into desired noodle shapes (typically 1/4 to 1/2 inch wide strips).
  7. Cook noodles in boiling salted water or broth for 2–4 minutes, or until tender. Drain and serve as desired.

Notes

  • Resting the dough helps make the noodles more tender and easier to roll.
  • Dust the noodles with extra flour before storing or cooking to avoid sticking.
  • Noodles can be made ahead and frozen or dried for future use.
