Description

A rich, savory, and creamy vegan mushroom gravy made with simple ingredients. This easy-to-make gravy is perfect for drizzling over mashed potatoes, stuffing, or any other comfort food dish.


Ingredients

  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cups sliced mushrooms (button, cremini, or any variety)
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups vegetable broth
  • 1 tbsp soy sauce or tamari
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper
  • 1/4 cup unsweetened almond milk (or other plant-based milk)
  • 1 tbsp nutritional yeast (optional for added richness)
  • Salt to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened and translucent.
  2. Add the sliced mushrooms and garlic to the skillet. Cook for 5–7 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.
  3. Sprinkle the flour over the mushrooms and stir well to coat. Cook for 1–2 minutes to eliminate the raw flour taste.
  4. Slowly pour in the vegetable broth, whisking constantly to prevent lumps. Add the soy sauce, thyme, and black pepper. Bring the mixture to a simmer, and cook for 5–7 minutes until it thickens to a gravy consistency.
  5. Stir in the almond milk and nutritional yeast (if using). Continue to cook for an additional 2 minutes until the gravy is smooth and creamy.
  6. Season with salt to taste, and serve hot over your favorite dishes. Store leftovers in the fridge for up to 4 days.

Notes

  • If you prefer a thicker gravy, cook for a few extra minutes or add an additional tablespoon of flour.
  • For a richer flavor, add a dash of vegan butter or coconut oil to the gravy.
  • Feel free to use different types of mushrooms for varied textures and flavors.
