A rich, savory, and creamy vegan mushroom gravy made with simple ingredients. This easy-to-make gravy is perfect for drizzling over mashed potatoes, stuffing, or any other comfort food dish.

- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cups sliced mushrooms (button, cremini, or any variety)
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 1/2 cups vegetable broth
- 1 tbsp soy sauce or tamari
- 1/2 tsp dried thyme
- 1/4 tsp black pepper
- 1/4 cup unsweetened almond milk (or other plant-based milk)
- 1 tbsp nutritional yeast (optional for added richness)
- Salt to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes until softened and translucent.
- Add the sliced mushrooms and garlic to the skillet. Cook for 5–7 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.
- Sprinkle the flour over the mushrooms and stir well to coat. Cook for 1–2 minutes to eliminate the raw flour taste.
- Slowly pour in the vegetable broth, whisking constantly to prevent lumps. Add the soy sauce, thyme, and black pepper. Bring the mixture to a simmer, and cook for 5–7 minutes until it thickens to a gravy consistency.
- Stir in the almond milk and nutritional yeast (if using). Continue to cook for an additional 2 minutes until the gravy is smooth and creamy.
- Season with salt to taste, and serve hot over your favorite dishes. Store leftovers in the fridge for up to 4 days.
Notes
- If you prefer a thicker gravy, cook for a few extra minutes or add an additional tablespoon of flour.
- For a richer flavor, add a dash of vegan butter or coconut oil to the gravy.
- Feel free to use different types of mushrooms for varied textures and flavors.
