Description

This Easy Ground Turkey Sweet Potato Skillet is a hearty, wholesome, and flavorful one-pan meal made with lean turkey, tender sweet potatoes, peas, and melty manchego cheese. Perfect for a quick weeknight dinner!


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ½ cup diced onion
  • 2 cloves garlic – peeled and minced
  • 1 teaspoon Italian seasoning
  • 2 cups diced sweet potato
  • 1 cup frozen peas
  • ⅔ cup grated manchego cheese
  • Fresh chopped parsley – optional for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the ground turkey, season with salt and black pepper, and cook until browned, breaking it apart with a spoon.
  3. Stir in the diced onion and garlic, cooking until softened and fragrant, about 2–3 minutes.
  4. Mix in the Italian seasoning, then add the diced sweet potatoes. Stir well and cover the skillet, cooking for 10–12 minutes until the sweet potatoes are tender, stirring occasionally.
  5. Add the frozen peas and cook for another 2–3 minutes until heated through.
  6. Sprinkle the grated manchego cheese over the skillet, cover, and let it melt for 1–2 minutes.
  7. Garnish with fresh chopped parsley if desired and serve warm.

Notes

  • You can substitute cheddar or mozzarella if you don’t have manchego cheese.
  • For extra greens, add spinach or kale at the end of cooking.
  • This dish stores well in the fridge for up to 3 days, making it great for meal prep.
