- 1 tablespoon olive oil
- 1 pound ground turkey
- ½ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ½ cup diced onion
- 2 cloves garlic – peeled and minced
- 1 teaspoon Italian seasoning
- 2 cups diced sweet potato
- 1 cup frozen peas
- ⅔ cup grated manchego cheese
- Fresh chopped parsley – optional for serving
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the ground turkey, season with salt and black pepper, and cook until browned, breaking it apart with a spoon.
- Stir in the diced onion and garlic, cooking until softened and fragrant, about 2–3 minutes.
- Mix in the Italian seasoning, then add the diced sweet potatoes. Stir well and cover the skillet, cooking for 10–12 minutes until the sweet potatoes are tender, stirring occasionally.
- Add the frozen peas and cook for another 2–3 minutes until heated through.
- Sprinkle the grated manchego cheese over the skillet, cover, and let it melt for 1–2 minutes.
- Garnish with fresh chopped parsley if desired and serve warm.
Notes
- You can substitute cheddar or mozzarella if you don’t have manchego cheese.
- For extra greens, add spinach or kale at the end of cooking.
