Description

Ingredients

  • 1 cup couscous
  • 1 cup water
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/3 cup kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring 1 cup of water to a boil in a medium saucepan.
  2. Stir in the couscous, salt, and a drizzle of olive oil. Remove from heat, cover, and let sit for 5 minutes.
  3. Fluff the couscous with a fork and transfer to a large mixing bowl.
  4. Add diced cucumber, cherry tomatoes, red onion, kalamata olives, and chopped parsley.
  5. Drizzle olive oil and lemon juice over the mixture, then toss gently until well combined.
  6. Add crumbled feta cheese and mix lightly to keep its texture intact.
