- 1 pound ground sausage
- 1 medium onion, diced
- 3 stalks celery, diced
- 1 tablespoon fresh sage, chopped
- 1 teaspoon fresh thyme leaves
- 3 cloves garlic, minced
- 2 large eggs
- 2 cups chicken broth
- 4 tablespoons butter
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F.
- In a large bowl, whisk together eggs and chicken broth. Add the cornbread cubes and let them soak gently.
- Heat a large cast iron skillet over medium heat. Melt the butter and sauté onion, celery, and garlic until soft, about 5 minutes. Add the sausage and cook until browned.
- Add the cooked mixture to the cornbread. Sprinkle in sage, thyme, salt, and pepper. Fold everything together gently to avoid breaking the cornbread.
- Transfer the stuffing mix back into the skillet, spread evenly, and bake uncovered for 25 to 30 minutes or until golden and set.
- Let it cool for 10 minutes before serving. Garnish with fresh herbs if desired.

- Use day-old or oven-dried cornbread for best texture.
- Feel free to substitute sausage with mushrooms for a vegetarian version.
