- 1 (2–3 lb) beef roast
- 1 large onion, sliced
- 2 cups beef broth
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- ½ teaspoon garlic salt
- ½ teaspoon thyme
Instructions
- Place the sliced onion in the bottom of your slow cooker.
- Season the beef roast on all sides with kosher salt, pepper, garlic salt, and thyme.
- Set the roast on top of the onions in the slow cooker.
- Pour beef broth over the roast.
- Cover and cook on Low for 8–10 hours or on High for 4–5 hours, until the roast is fork-tender.
- Remove roast and shred or slice before serving. Spoon some of the cooking juices over the meat for extra flavor.
Notes
- For extra richness, sear the roast in a hot skillet before adding it to the slow cooker.
- Add carrots, potatoes, or celery to make it a complete one-pot meal.
