Description

This Easy Crock Pot Beef Roast recipe is a set-it-and-forget-it classic! Juicy, tender beef slow-cooked with onions, broth, and simple seasonings makes the perfect hearty dinner. It’s comforting, flavorful, and ideal for busy weeknights or Sunday family meals.


Ingredients

  • 1 (2–3 lb) beef roast
  • 1 large onion, sliced
  • 2 cups beef broth
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • ½ teaspoon garlic salt
  • ½ teaspoon thyme

Instructions

  1. Place the sliced onion in the bottom of your slow cooker.
  2. Season the beef roast on all sides with kosher salt, pepper, garlic salt, and thyme.
  3. Set the roast on top of the onions in the slow cooker.
  4. Pour beef broth over the roast.
  5. Cover and cook on Low for 8–10 hours or on High for 4–5 hours, until the roast is fork-tender.
  6. Remove roast and shred or slice before serving. Spoon some of the cooking juices over the meat for extra flavor.

Notes

  • For extra richness, sear the roast in a hot skillet before adding it to the slow cooker.
  • Add carrots, potatoes, or celery to make it a complete one-pot meal.
