Description

  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil, plus more for greasing dish
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese, divided
  • 1 1/2 cups shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon kosher salt, or to taste
  • 1/2 teaspoon black pepper, or to taste

Instructions

  1. Preheat Your Equipment: Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil.
  2. Combine Ingredients: Bring a large pot of salted water to a boil and cook pasta until just under al dente, then drain. In a large skillet, melt butter with olive oil over medium heat. Add garlic and cook 30 to 60 seconds until fragrant. Add shrimp, season with salt and pepper, and cook 1 to 2 minutes per side until just pink. Stir in lemon juice, chicken broth, and heavy cream, simmer 1 to 2 minutes. Off heat, fold in half of the Parmesan.
  3. Prepare Your Cooking Vessel: Add the drained pasta to the skillet and toss to coat. Spread half of the mixture into the prepared baking dish.
  4. Assemble the Dish: Top with half of the mozzarella, then add remaining pasta mixture. Sprinkle remaining mozzarella and remaining Parmesan evenly over the top.
  5. Cook to Perfection: Bake uncovered for 20 to 25 minutes until the cheese is melted, bubbly, and lightly golden.
  6. Finishing Touches: Remove from oven and rest 5 minutes. Sprinkle with chopped parsley.
