- 2 boneless, skinless chicken breasts
- Salt and freshly ground black pepper
- 1/3 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/2 cup avocado oil (for frying)
- 2 cups mozzarella cheese, shredded or thinly sliced
- 1/2 cup freshly grated Parmesan cheese
- 24 ounces marinara sauce
- Fresh parsley, chopped (plus extra for garnish)
Instructions
- Preheat oven to 375°F (190°C).
- Season chicken breasts with salt and pepper on both sides. Pound slightly if too thick for even cooking.
- Dredge chicken in flour, dip into beaten eggs, then coat with breadcrumbs.
- Heat avocado oil in a large skillet over medium-high heat. Fry chicken breasts until golden brown and crispy on both sides, about 3–4 minutes per side. Transfer to a paper towel–lined plate to drain excess oil.
- Spread a thin layer of marinara sauce on the bottom of a baking dish. Place fried chicken breasts on top.
- Spoon remaining marinara sauce over chicken, then sprinkle generously with mozzarella and Parmesan.
- Bake for 20–25 minutes, or until cheese is bubbly and golden and chicken is fully cooked through (internal temp should reach 165°F/74°C).
- Garnish with fresh parsley and serve warm with pasta, salad, or garlic bread.
Notes
- For extra crunch, use panko breadcrumbs instead of regular Italian-style.
- You can prep the chicken ahead of time and bake just before serving.
- Great with spaghetti, fettuccine, or even zucchini noodles for a lighter option.
